This week the recipe was chosen by Anonymous New York. I'll be honest -- until now the only jambalaya I had ever made was out of a Zattaran's box. And, as you all probably guessed, its not very good. So, I went into to this recipe with slightly mixed feelings. Do I like jambalaya -??? Well maybe, but I definitely didn't really like the kind I have eaten my whole life.
However, I was pleasantly surprised by this recipe. I had read some of the comments which said the jambalaya was a little bland, so I decided to replace the ham with andoille sausage. Also, I added a bit more chicken stock than the recipe called for as I didn't want the jambalaya to get too dry.
The verdict - I loved this recipe (and the cats loved the shrimp!). I thought it was very flavorful and nice and spicy (thanks to the andoille sausage). I liked the jambalaya so much that I brought some to work for lunch and even offered some to Peggy (of Pantry Revisited) to taste because she seemed a little skeptical of the recipe.
