CEIMB: Buffalo Chicken Salad with Blue Cheese Dressing

This week's recipe was chosen by You Eat Now and it was so good! I guess I first have to admit that I LOVE hot wings! I love hot wings so much that once my friend Laura and I went to Hooters one Friday after work to get wings! Seriously, its an obsession. I used to make hot wings all the time. Not so much anymore though because they are SO UNHEALTHY, plus I really have to stay away from fried food.

So, this recipe was the perfect thing to satisfy the void in my life left by the loss of my dear friend Hot Wings.
I followed the recipe except for substituting red wine vinegar in place of champagne vinegar. I must admit, I was a little bit skeptical about the blue cheese dressing. Not only am I a lover of hot wings, but I also love blue cheese dressing. Every now and again I splurge and get blue cheese on a salad or can even be found eating strait blue cheese!
After mixing up the dressing, I thought it was very "yogurty". All that yummy blue cheese and all I could taste was the durn yogurt. Side note, have you all bought more plain yogurt since joining the CEIMB blog than you had previously bought in your whole life?? Maybe its just me. I love yogurt, but I always buy flavored yogurt. Plain yogurt = blah!
Anyways, back to the dressing. I was skeptical. Well once the chicken was marinated in hot sauce (yum), broiled and added to the delish salad with lots of celery, I definitely couldn't taste as much of the yogurt in the dressing. In fact, I thought the combination was just plain fabulous! I will definitely be making this recipe again!

  1. I totally agree with you: a great salad!! I too was sceptical about the blue cheese dressing, especially combined with the hot sauce... But it turned out perfect@

  2. I didn't like the dressing when I tasted it beforehand and I was mentally trying to figure out what I was going to do when it ruined my chicken & salad but like you I thought it worked so well all together!

  4. Totally hear you on the loving hot wings thing. It too bad they are so awful for you. This certainly did a good job of filling the craving for them, but of course, nothing is quite like the real thing.

  5. I love Hooters hot wings! Well, their hot sauce that is, I used to dip their french fries in it! Your salad looks great! I can't wait to try this for dinner tonight! I'm really curious on how the dressing will be...

  6. I am going to make this tonight! I'm running late this week with my cooking and my blogging. Just too much going on! Yours looks great and I love hot wings probably almost as much as you do. I even love the "fake" boneless ones that restaurants serve now. Sssssssh, they are actually my favorites!!

  7. Oh, yeah. I'm a major lover of wings, too...the hotter, the better! And I love pretty much all things blue cheese. I will definitely be eating this again, and often.

  8. I love hot wings too and thought this was a great recipe. I have bought more plain yogurt since ellie than ever. However, the yogurt usually works strange, huh?

  9. Oh, so glad that you liked this, Jen! I did not make this, but it's gotten such rave reviews that I know that I need to go back and try it. Glad the yogurt dressing worked for you in the end -- Ellie certainly does love her some yogurt.
