CEIMB: Grilled Thai Beed Salad

The recipe this week was chosen by none other than myself! Yay for my recipe pick week! I was really excited about this salad and diligently put the steak in the marinade Sunday afternoon so that I could put the salad together quickly on Monday night. Well little did I know how crazy my Monday would be. By the time I got home after an extremely long day 12+ hour day at the office and a 2 hour meeting after work, I had one thing in mind -- eat as quickly as possible so I could go to sleep! Afterall, it was quickly approaching 9pm!
Luckily this salad was quick to put together (although washing and drying lettuce isn't my idea of a good time). I really liked the mix of the lettuce, cilantro and basil in the salad dressing. I didn't love the steak -- because even though it marinated for a good 30 hours - it still really did not have any flavor. I think the salad needed something - maybe a fruit or a nut or maybe some toasted ramen noodles??? What do y'all think?

I will definitely be making this salad again. I absolutely loved the dressing. I think it would be very tasty on noodles too!

  1. Jen, thanks for a great pick this week!! I really enjoyed this salad. I added a lot to it though, I think I may not have liked it as much without all of the add-ins. The dressing was really yummy!

  2. It was a great pic. ONe of our favorites. I think sometimes the meat itself lacks flavor - that's according to Ted. So no matter what you do to it, it just seems to come up like a slab of nothing. Not anyones fault - just a bad cow. Maybe that's their way of letting us know they don't want to be eaten :) (oh sorry - the voice of a pescatarian).

  3. I liked this salad a lot..I think the dressing was the best part. I think it would be better with ramen noodles on top..good idea. -Mary

  4. I'm surprised your meat didn't have enough flavor; I only marinated mine for four hours, and it turned out really flavorful. I do think it could use a little something else to make it pop, but I'm not exactly sure what that something would be. We really enjoyed it as it was though so thanks for a great pick!

  5. I can't believe your meat wasn't very flavorful, mine was just the opposite. This was a great pick and I will definitely be making it again, the marinade/dressing is superb.

  6. We loved this salad, so thank you for picking it. I had never had a chance to make anything with Thai flavors before, so this was quite nice. Okay, I will 'fess up, Counselor, after the photo shoot, I added some grape tomatoes...LOL...it just needed some color! Thanks for picking such a winner as we will make it again soon.

    I thought the most flavor on the meat was on the outside....the marinade seemed to crust since I used pretty high flames on the grill.
    I can't get enough of your cats....oh gosh, they are cute!

  8. I'm so impressed with your dedication. After a long day like that I feel like the last thing that I want to do is prepare food. I just want food in the mouth as fast as possible.

  9. Jen, I think this was a great pick! I think you'll really enjoy it next time you make it when you haven't worked a 12 hour day! I loved the marinade/dressing, and will definitely make this again!

  13. Forgive my late comments on this recipe, Jen. I never got the post up about it, but we really enjoyed this. I'm shocked that the steak was lacking in flavor for you. I thought it was great. I didn't' get to make the salad, but I really enjoyed the steak on it's own. I would have probably skipped this one without the group. Tasty choice!
