CEIMB - Sage Rubbed Pork Chops with Warm Apple Slaw

Well I am so excited because this week 's recipe was chosen by none other than moi! I feel like I just joined the CEIMB blog...so picking the recipe is a BIG DEAL! I picked the sage-rubbed pork chops with warm apple slaw because I have been eyeing the recipe just about every time I open up the cookbook. I had made a version of the pork chops before and thought they were fabulous, but I had never made the pork chops and the slaw together. And I must say...I was not disappointed. So, what did everyone think about the pork chops??? I can't wait to read and find out!

Overall, the pork chops were great. The slaw was good...but next time, I would probably go back to just making the pork chops....or maybe I could alter the slaw recipe a bit.
I did however, think that this recipe was really good and very easy to make. There are definitely a couple things I would change, but they are very minor things. Mostly, I wish I would have waited to add the apples until closer to the end so that they remained firm...and not completely disintegrated in the sauce. You think I would have thought about this when I was cooking on Sunday...but after making veggie soup and a ham and spinach quiche...apparently I was tired of cooking! Dare I say such thing on a cooking blog?!?! Please fellow bloggers, do not disown me. Or maybe I had been brainwashed by the cats...because they were much more interested in the pork than the slaw! I guess we will go with the former.

  1. Jen, your pictures are great!! I REALLY loved the pork chops. Okay, so I kind of messed up their preparation (SHOCK!) but the rub was great, and it's totally a keeper -- I will definitely use the pork chop rub again (maybe even changing up the sage with thyme or rosemary every once in a while, just for something different!) The slaw was not my favorite, but I think it was a good recipe -- I guess I'm just not a cooked cabbage lover. I think this was a great pick! It's a quick and easy weeknight dinner, and the slaw can be modified (and/or eliminated?) to suit individual tastes! Nice pick, girlfriend!

  3. Okay let's try again. I am so glad you picked this because my DH and I absolutely loved it (as you already know) and we even devoured the leftovers the next night. Of course we are pork chop and slaw lovers anyway. I had been eyeing this recipe as well so I was excited to try it. Thanks for a great pick. It's fun cooking with you!

  5. I am glad you picked it. I liked the pork chops but you are right about the slaw. The apples would have been better with a little curnch.

  6. While my husband didn't like it and my kids wouldn't try it, I did enjoy this recipe. I will definitely use the rub again, too. I liked the slaw, but no one else did. Well, I can't please 'em all! Thanks for choosing this one.

  7. Hi Jen, just finding out about your blog. I thought I had the 31st floor cooking blogs covered, but apparently not! I know Cathy and Peggy et al from Tuesdays With Dorie. I'm an ex-litigator, so love the legal puns, ha ha. Your dinner sounds yummy but I'm pretty sure I'd skip the slaw. LOVE sage, though.
